Vanishing (in a good way!)


I have been on an oatmeal cookie kick the past couple of months.  Oatmeal is known to be good for nursing mamas...and, well, I just think it's tasty!  Last week I went healthy with oatmeal, walnut, cranberry-raisin cookies.  This week is another story - nothing but chocolate chips and oatmeal here!  I have found, through trial and error, that the best oatmeal recipe is (surprise!) on the underside of the oatmeal canister cover.


You will need:
- 2 sticks butter, softened
- 1 cup firmly packed light brown sugar
- 1/2 cup granulated suger
- 2 eggs
- 1 tsp vanilla (plus a dash more)
- 1.5 cups flour (I use whole wheat, but you can use all-purpose as well)
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt (I use kosher salt...for pretty much all my salt needs!)
- 3 cups uncooked oats
- 1 small bag chocolate chips (or you can put in healthy stuff like dried fruit or nuts)

Stats:
Prep time: 10 minutes
Cooking time: 10-12 minutes per batch
Serves: depends on how big you make your cookies and how many people you want to share with! 

What to do:
Heat oven to 350 degrees.

Combine all dry ingredients except the oats (flour, baking soda, cinnamon and salt).

Beat together butter and sugars on medium-high until creamy (about 3 minutes).  Add in eggs and vanilla and beat well.  Now add in the dry ingredients and mix well.  Finally add the oats and any other yummies, healthy or otherwise (e.g. chocolate chips).

Taste batter...taste it again (just to make sure it's not poison - wink wink).  Drop rounded teaspoon (or tablespoon) full rounds onto an ungreased cookie sheet.  Bake for 10-12 minutes until just golden brown.  Enjoy!

Yes! As someone who got to share in the cookie love last week, these cookies are as good as she claims. Definitely worth making them over and over and over again.

Hmmm...I've declared it domestic day around here. Perhaps some cookies of our own would be just the right thing.
